Wayland has been a private chef & wild game butcher since founding Blackfoot Butchers in early 2017. 


Wayland focuses on the bounty of the outdoors and specializes in wild game menu development. His passion is creating vibrant, delicious, and nourishing meals using high-quality local, seasonal & wild game ingredients. Well-versed in the traditional tastes of French, European, & Southern Cooking styles, Wayland integrates these arts along with all different types of wild game and vegetation into his work to make every meal a unique and memorable culinary experience. 


Wayland consistently and enthusiastically expands his palette and knowledge by exploring local farmers' markets and open markets abroad. Traveling to and exploring countries such as Mexico, Puerto Rico, Spain, England, Ireland, Italy, France, and the Netherlands, He has broadened his spectrum of cuisine and brings these flavors and cultures to his style, craft & wild game Experiences.


Wayland's love of Hunting and fishing for over 20 years has brought Wild game from all across America to the table in ways that tickle the senses and open a new world of flavors and culinary experiences. For the last 5 years, Chef Wayland has worked with clients in New Mexico, California, New York, and Illinois providing private chef services, as well as menu consulting and recipe development. 


Wayland believes that the process of bringing food from the field to the table is an art that deserves appreciation and understanding. Our events aim to bridge the gap between hunters and food enthusiasts, fostering a deeper connection with nature and the food we consume. 


When not developing menus, or cooking a private client dinner, Wayland enjoys discovering wild spaces, hunting & fishing near his home with his fiancé Connie and their GSP Bird Dog Quinn in Pulaski NY.
